First Steps in Cooking

Initiated into good things by his parents, Luke Croston spent his
childhood with them in a garden full of quality produce.
After his apprenticeship, the young chef quickly took a liking for
competitions : first in the “Young Culinary Competition” in
Canberra, in 2000, he was also third , the following year, in the
Best Apprentice of the Year Competition.

Training for the “Bocuse d’Or”
Addicted to competition, the young chef has regularly taken part in challenges
of all sorts. The “Bocuse d’Or” is not totally new to him, as he was the
Commis to the Australian candidate in 2003. It is again for the challenge, for
that matter, that he will be in Lyon in January.
A Competition during which he will “learn so much and meet so many people
that it’s a reward in itself.” Partly trained by Serge Vieira, the Frenchman who
won the last time, he has firstly assured himself of the effectiveness of the dishes
before focussing on the timing and precision of the different operations.

Outside the kitchen

In the kitchen, Luke Croston prefers to use products in season, and of the finest
quality in simple dishes. When he comes out of the kitchen, he still always likes
to eat and drink, but he also likes to spend time outdoors, and go off riding his
motorbike.

Between us…

The candidate speaks

his cooking : “She loves
it. She would just say
that I don’t cook enough
when I go home”

because it has so many
uses and can appear in
so many different forms”

Vanessa Mateus has been training with Luke Croston for several months. The quality and the strict
demands of his work sessions have made her realise the prestige of the competition.
