The selection in the new MICHELIN guide Netherlands 2012 confirms the positive trends and
the high potential of the Dutch hospitality industry across all categories, from small bistros to
the best “starred” restaurants and from family-run inns to luxury hotels.
With three restaurants earning their second star – De Kromme Watergang in Breskens,
Chapeau! in Bloemendaal and Librije’s Zusje in Zwolle – the Netherlands has more two-star
restaurants than Belgium for the first time in the history of the MICHELIN guide. In this
category, the MICHELIN guide inspectors have noted a constant improvement in day-to-day
quality and a commitment to excellence that points to a very promising future for the
country’s gourmet dining scene.
The new stars in the MICHELIN guide Netherlands 2012 underscore the rich diversity of
Dutch haute cuisine. One example is Pure C in Cadzand, which offers distinctly
contemporary cooking made with marvelous ingredients from the surrounding sand hills and
low-lying land reclaimed from the sea. The restaurant’s very young chef – the country’s
youngest “starred” chef – honed his skills at Oud Sluis and has developed a highly personal
culinary style. De Echoput in Hoog Soeren – once a leading name in Dutch gastronomy –
has regained a star thanks to the spirit and dynamism of the new kitchen team. Lastly,
Perceel in Capelle aan de IJssel has been awarded a first star in recognition of the elegant
yet natural cuisine developed by the young couple in charge.
The MICHELIN guide Netherlands 2012 features a selection of more than 600 hotels and
700 restaurants in all comfort and price categories. MICHELIN inspectors visit all
establishments anonymously, pay their own bills and make their decisions independently.
Stars are awarded on a consensus basis according to five criteria that are the same
everywhere around the world: product quality, preparation and flavors, the chef’s personality
as revealed through his or her cuisine, value for money, and consistency over time and
across the entire menu. These criteria are adapted to each type of cuisine.
Anonymous visits, independence, consistency and identical selection criteria in all
countries enable the MICHELIN guide to direct its readers to high-quality establishments,
year after year. These are the values that – since 1904 – have made it the indispensable
reference guide when choosing a restaurant or hotel. Today, the collection comprises 27
guides covering 23 countries. In all of them, readers will find the same diversity and quality
criteria, from starred restaurants to small neighborhood eateries and from luxury hotels to
simple, family-run inns.
Because it satisfies the desires and demands of its readers, the MICHELIN guide is truly for
everyone. Whether looking for a romantic setting, a friendly place to dine with friends or a
good restaurant near the office for lunch with a colleague between two meetings, readers are
always sure to find what they want in the MICHELIN guide.
